I love yakisoba at Benihana’s and I decided to try to figure out how to make it. I do not have exact measurements, sorry, I do not cook that way. I am going to guesstimate.
Yakisoba
1 pkg. soba noodles or chow mien noodles, prepared
4 small zucchini
3 carrots
1 bag of broccoli slaw
1 med onion
1 tsp. minced garlic
salt and pepper
Saute onion and carrots in olive oil over high heat. Add broccoli and zucchini after the onions start to look translucent. I saute the zucchini until it is tender but I like mine a little firm. I add the garlic, salt and pepper at this time. Toss in the noodles.
Sauce
1/3 cup Tamari
pinch of nutmeg
1 tsp sesame oil
Wisk ingredients in a small bowl and pour over noodles. Toss it around until everything is incorporated.
I added one cup of cooked chicken but it tastes great with out it too. It is all up to you and your tastes.

I make a similar dish with shrimp, and a dash of rice vinegar in the sauce. One of my favorite dishes.
